Eggplant with Thai Basil

I liked the basil eggplant that was served at MaMaWok of Reston and wanted to try it. I found this recipe on the web. It’s simple and delicious.

-Cut eggplant into rolling slices (slice, roll, slice, roll and so on).
-Chop chili peppers and garlic into fine pieces (I used 5 pieces each).
-Heat up wok.
-Add generous amount of cooking oil.
-Stir in chopped chili and garlic.
-Stir fry to flavor.
-Add eggplant.
-Stir fry until eggplant slices are soft
-Alternatively
*Stir fry for one minute.
*Add half cup of water.
*Stir and cover wok.
*Let cook until most water evaporates (about 5 minutes).
-Add fish sauce and sugar. Stir fry.
-Stir in basil leaves (I used about ten leaves). Stir fry.
-That’s it.
