Marinate
* Clean/score fish
* Marinate fish for 15 min with:
– 2 tsp cooking wine
– 2 tsp salt
– 1 chopped green onion
– 3 ginger slices
Cook
* Heat up frying pan and add cooking oil
* Fry fish on both sides until brown
* Take out fish and pat dry with napkins
* Pour out oil leave 1 tbsp for stir frying
* Stir fry in following order:
– 1 diced green onion
– 2 slices diced ginger roots
– 2 cloves diced garlic
– 2 diced hot pepper
– 2 tbsp soy source
– 1 tbsp cooking wine
– 2 tbsp sugar
* Add 1/2 cup water and stir
* Add fried fish and cook for 5 min with cover
* Take out fish and place it on plate
* Add to remaining sauce and stir:
– green onion
– starch
* Pour thickened sauce over fish
* Garnish and server
