Marinade
* Season one rack of lamb, e.g. from Costco, with salt and pepper
* Use a small mixer and mix following ingredients into paste:
– Half head of garlic
– 1 tablespoon of fresh rosemary leaves
– Quarter cup of Olive oil
* Brush paste onto lamb
* Sit at room temperature with bone side down for 1 hour
Roast
* Roast 15 min with bone side down at 450 degree
* Turn and roast additional 10 min
* Rest for 10 min before serving
Source
* Mix into a saute pan:
– Left over from the roast pan or aluminum foil
– Fresh juice from half of a lemon
– Your favorite herbs
– Half cup of cold water
* Boil to condense
* Pour onto lamb rack
