Easy Chinese Chicken Soup

 

Materials

* Half of organic whole chicken, e.g. from Costco
* Dried scallop bits, e.g. from oriental grocery store
* Ham, e.g. from any grocery store
* Chinese cabbage (bai chai), e.g. from oriental grocery store

Prepare Chicken Soup

* Clean and chop half chicken into walnut size pieces
* Soak dried scallop bits then wash with cold water
* Chop ham into small pea size bits
* Place into dutch oven:
– Chicken pieces
– Dried scallop bits
– Ham bits
* Fill dutch oven with cold water
* Heat to boil
* Reduce heat to simmer for 2 hours

Prepare Chicken Noodle Soup

* Boil water in a separate saucer pan
* Place in your favorite type of Chinese noodle.
– Noodle amount depends on how many servings you’re preparing.
* Cook noodle until al dente
* Scoop noodle into serving soup plates
* Scoop chicken soup prepared in previous step into saucer pan
* Heat chicken soup to boil
* Chop Chinese cabbage into bite sizes
* Mix Chinese cabbage with chicken soup
* Let boil for two minutes
* Add salt and pepper to taste
* Pour chicken soup into the noodle in the soup plates
* Garnish and serve :)
